About New York Strip
Cut from the short loin, the New York Strip is firm, lean, and beefy-flavored. It has a fat cap on one edge that renders beautifully when cooked properly. It’s a great everyday steak — predictable, reliable, and delicious.
Grill Method
Preheat your grill to high heat (450–500°F). Season with salt and pepper. Grill on direct heat for 3–4 minutes per side. For thicker strips, finish with a minute or two on indirect heat. Rest 5 minutes. Optionally render the fat cap by holding the steak edge-down against the grill for 30 seconds before resting.
