About Flank Steak
Flank steak is a flat, wide cut from the abdominal muscles. It’s lean, intensely beefy, and takes marinades extremely well. Cooked right and sliced correctly, it’s excellent. Cooked wrong or sliced wrong, it can be tough.
Marinate & Grill
Marinate for 2–8 hours: 1/4 cup soy sauce, 2 tbsp olive oil, 2 tbsp lime juice, 3 cloves minced garlic, 1 tsp cumin. Grill on high heat 4–6 minutes per side. Pull at 130°F internal. Rest 5 minutes. Slice paper-thin against the grain at a 45-degree angle. Great for tacos, fajitas, or alongside roasted vegetables.
