About Skirt Steak
The skirt steak comes from the plate section just below the ribs. It’s thin, flat, and intensely beefy-flavored — one of the most flavorful cuts on the animal. It’s also one of the fastest to cook, which makes it a great weeknight option.
Taco Night Method
Marinate in lime juice, cumin, chili powder, garlic, and a splash of soy sauce for 30 minutes to 2 hours. Pat dry. Grill or cast iron over the highest heat possible — 2–3 minutes per side. Rest 3 minutes. Slice thin, against the grain, at a diagonal. Serve with warm tortillas, onion, cilantro, and salsa verde.
